Tuna white in olive oil

White Germon tuna, cooked whole, trimmed by hand, and laid in virgin olive oil, where it softens and marinates until the tin is opened. The oil takes on flavour from the fish along the way; it would be a shame to pour it down the sink.Cold on bread or into a salad, warm over pasta or in a tart. Dinner from the kitchen cupboard.
